Creamy chicken Ajvar pasta

DESCRIPTION

Creamy Ajvar chicken pasta! A really quick, easy and delicious pasta with few ingredients that's great for lunch boxes!

INGREDIENTS (4-5 Portions)

  • Creamy Ajvar Chicken

    4-500 g chicken thigh fillets

    2-3 garlic cloves

    2-3 dl of white wine

    1 chicken stock cube + 1-3 dl water

    2 dl crème fraiche

    1 dl Ajvar relish

    Zest and juice of one small lemon

    A big bunch of basil.

    Other

    Butter and olive oil for frying

    Salt, freshly ground black pepper

    500 g pasta

INSTRUCTIONS

  1. Fry the chicken thigh fillets in oil and butter on medium to high heat until crisp. Season with salt and pepper.

  2. Finely chop the garlic cloves and add to the pan. Fry for one min.

  3. Add white wine. Let reduce by half.

  4. Add one chicken stock cube,, 2 dl crème fraiche, 1 dl Ajvar relish, zest and juice of one small lemon and bring to a boil. Add 1-3 dl water if it gets too thick (optional).

  5. Simmer for 5-10 min, then add finely chopped basil.

  6. Cook pasta al dente. Combine the sauce with the pasta and stir until creamy.

  7. Plate and top with freshly ground black pepper and some finely chopped basil!
