Creamy kale pasta with parmesan and roasted walnuts

DESCRIPTION

One of my favorite pasta dishes! Creamy kale, parmesan, white wine, lemon and roasted walnuts. A perfect combo! It’s also quite quick to make and goes great to make on a hike, as can be seen on the pictures below.

INGREDIENTS (4 Portions)

Creamy kale sauce

  • 2-3 shallots

  • 2-3 garlic cloves

  • A nub of butter and some olive oil

  • 3 dl white wine

  • 1 vegetable stock cube

  • 100 g of kale (ish)

  • 2-3 dl cream

  • 50 g parmesan

  • 1 lemon

Topping

  • 50 g of walnuts, or other nuts or seeds of your choice

  • 50 g parmesan

  • Some of the lemon from above

  • Freshly ground black pepper

Other

  • 500 g pasta that goes well with creamy sauces


INSTRUCTIONS

  1. Finely chop the shallots and garlic. Fry in oil and butter together with salt and pepper on medium heat for 5-10 min, it shouldn’t get any color.

  2. Add 3 dl of white wine, reduce to half. Add the stock cube.

  3. Add the kale. Fry a few minutes until it gets a bit soft.

  4. Add the cream. Bring to a boil.

  5. Add the parmesan. Bring to a boil. Season with salt, pepper and the zest and juice from 0.5-1 lemon (save some for garnish). Taste and adjust seasoning with more salt or lemon if necessary.

  6. Roast the walnuts in a dry pan until golden. Roughly chop.

  7. Boil pasta al dente. Drain and combine the pasta with the creamy kale sauce.

  8. Plate and top the pasta with more parmesan, freshly ground black pepper, lemon zest and the roasted walnuts!

Below you have some pictures from when I cooked this on a hike in Katterjåkk, summer 2020! If you’re only taking a day hike you don’t even need a cooler.
